Several fruits have recently become more popular as part of gift baskets, confections and restaurant menus that may not be familiar to many diners. More than a trend, the availability and popularity of new produce from around the world means an expanding palette of options. But do you know how to eat a persimmon? Can litchis be cooked? Can you eat a quince raw? When it comes to fruits that originate outside of North America, we have a lot to learn and appreciate. Here is an overview of the basic uses of some special fruits that we're coming across everywhere from cakes to cocktails.

Kumquats

The word kumquat comes from the Cantonese word meaning "golden orange" as this citrus fruit has a dark orange color. Unlike an orange, however, the rind is tangy and edible. In addition to being eaten on its own, the kumquat can be candied or made into jam. While kumquat plants are often used in decoration, the fruit spoils within days, but they can be held longer in the refrigerator. Interestingly, the kumquat is also bred with other citrus fruits such as lemons and limes, producing the limequat and the orangequat.

Litchis

Considered a good luck charm in China, the litchi comes from a huge evergreen tree and taste like a grape combined with a coconut. Like the acai berry and other small fruits, litchis don't travel well so they are most commonly found in cans. However, if you do see the nicely ripened bright-pink fruit fresh, simply peel their thin shells and their white flesh will make a refreshing dessert. And if you decide to cook them as part of a meat or fish dish, be gentle!

Persimmons

The quintessential winter fruit, the persimmon sometimes has the look of an orange tomato and the feel of an apple. The two most common types of persimmons are fuya and hachiya. The fuyu persimmons can be eaten like an apple while the hachiya persimmon is a softer fruit that should be consumed when very ripe and the center is almost liquid. Persimmons can be preserved through canning or drying or made into a puree to accompany desserts. Persimmons are also the national fruit of Japan.

Pomegranates

Picked when fully ripe, the bright red pomegranate can be eaten fresh as-is, its pulp and seeds being tart and quite refreshing. Pomegranate seeds are often used in Iranian and Middle Eastern cooking. The juice of the pomegranate is the source of the red cocktail syrup grenadine. The pomegranate juice market has also exploded in recent years, due to its high level of potassium, vitamin c and antioxidants. They can be left at room temperature for several days, or refrigerated for up to 3 weeks. If you're feeling adventurous, try poking a hole in the flesh of the pomegranate and sipping the juice from a straw.

Quince

Another delightful fruit native to Iran, the yellow, pear-like quince is best known for its use in jams and jellies. You may have seen quince paste offered as part of a cheese plate, as it provides a sweet compliment to hard, nutty cheeses. Quince has also been used since ancient times to make perfumes as well as wine, syrups and as an addition to meat and poultry dishes. It's not eaten raw, though it can be refrigerated for several weeks or its pulp frozen. And quince is reportedly good for the gastrointestinal system.

When we lived in Malta, we ate a lot of pomegranate. We even had a tree in the garden and indeed are house was named after the pomegranate, Ta' Rumina (in Maltese).

The pomegranate is an ancient fruit enveloped in much history and myth, especially in the Middle East. Pomegranate is significant in Jewish custom, as it is said to hold 613 seeds to symbolize the 613 commandments in the Torah. Romans imported their pomegranates from Libya and the Chinese mention pomegranate as back as the Han and Sung dynasties. The Spanish conquistadors bought the pomegranate to South America, and missionaries took it to California.

While I was living in England we would see them in the markets, the season was short lived, but they really didn't cause much of a stir, then. More recently all that has changed in the West, these days it has become a winner, rising to the status of a 'super food', something they have always known in the East. It is thought the pomegranate originated in Iran and India.

The pomegranate has a leathery type skin, roughly the size of a large apple, its juice is sweet and tart, is totally packed with seeds, each one is surrounded by a translucent dark pink juice sac. It has been reported it's nutrients helps to protect against heart disease, cancer and all sorts of problems associated with aging. Full of Eastern promise, it is loaded with antioxidants, vitamin C, niacin (B3), potassium, folic acid, iron, fiber, and more. Even green tea and red wine, have fewer merits, as pomegranate has three times the antioxidants.

It is thought that maybe one of the reasons this fruit didn't take off sooner in the West, was the fact it is a time consuming fruit to prepare. You need a little patience, but it is fun, and well worth the effort. It's not like grabbing an apple that you can eat while you are on the run. We would have a great time in Malta eating them straight off the tree. You need to cut off the top and the bottom and score down the tough but thin skin with a knife, underneath is a bitter membrane (you don't eat) housing hundreds of small seeds encased in translucent ruby sacs of juice. This bitter, inedible membrane holds the seeds, open up the fruit it will be in sections, invert the sections.

Since the pomegranate's rating has soared in the charts, more people are willing to prepare it. Pomegranate is a versatile fruit, excellent in all sorts of salads, on your breakfast etc. The fruit is red, but it can also be found with mainly a yellow skin that has a patch or two of pink. Pomegranates can be kept in the refrigerator for up to two months, or in a cool, dark place for up to a month. These days California grows pomegranate commercially.

Grenadine, the light syrup that has been added to alcoholic drinks for decades, was made from pomegranates, unfortunately these it is not made from the fruit.

Pure pomegranate oil is amazing, a light easily absorbed oil. It has been shown to help slow down the signs of aging by maintaining the thickness of the epidermal, and by encouraging the life of dermal fibroblast cells. It is these busy cells that produce the skin's supporting structural fibers like collagen and elastin. As already mentioned pomegranate seems to have some very potent antioxidants, some research says more than most plants.

6 oz Mount Gay Eclipse Rum

4 oz Simple syrup

5 oz Fresh lime juice

2 oz water

2 tsp Grenadine syrup

3 dash Angostura bitters

1) Mix all ingredients in a jug with a spoon.

2) Serve in tall glasses fill with ice.

3) Garnish with a cherry on a sword and add a sprinkle of ground nutmeg.

Serves 4.
